Ingredients
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 2 pork chops
- 3/4 cup hard cider
- Pinch of salt and pepper
Directions
- Set a skillet over medium-high heat, add the oil, and let it heat. Scatter in the onion slices and cook, stirring frequently, until they take on good color, about 4 minutes.
- Stir in the thin-sliced red bell pepper, then reduce the burner to medium low. Continue cooking until the pepper has softened, 7 minutes. Push the onion and pepper over to the sides of the skillet, leaving room in the center.
- Sprinkle the chops with the salt and pepper. Lay them in the cleared spot, raise the heat to medium-high again, and cook for 3 minutes on each side.
- Add the cider, lower the heat to low, and let everything simmer for about 8 to 10 minutes. Serve right away.
