Ingredients
- 1/4 cup brown sugar
- 1 Tbsp Five spice blend
- 2 cloves garlic, minced
- 1 Tbsp rice vinegar
- 3 Tbsp soy sauce
- 4 lb pork loin
- 1 Tbsp cornstarch
Directions
- Combine the five spice blend, brown sugar, minced garlic, soy sauce, rice vinegar, and 1/2 cup water in a bowl, stirring until the mixture is even. If you like, trim excess fat from the pork loin, then cut the pork into 3-inch pieces. Add the pork to the bottom of a 4-quart or larger slow cooker, and pour the spice mixture over it.
- Cover the slow cooker and cook for 4-5 hours on high, or 8-10 hours on low. When it is finished, the pork should be tender enough to come apart easily.
- Using tongs, gently lift the pork pieces out of the slow cooker. Discard any large bits of fat or gristle, then shred the pork with 2 forks.
- Skim or remove any fat or stray pieces from the liquid left in the slow cooker. In a small bowl, mix 1 Tbsp cornstarch with 2 Tbsp water, then stir that mixture into the slow cooker liquid. Add the shredded pork back to the cooker and stir until it is coated. Put the lid back on; with the slow cooker set to high, let it go for 30 more minutes, or just until the liquid starts to bubble and thicken. Serve hot.
