Pork Stir Fry with Green Onion

Ingredients

  • 1 pound pork loin or boneless pork chops
  • 2 Tbsp soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 4 Tbsp peanut oil or canola oil
  • 5 cloves garlic, thinly sliced
  • 8-12 scallions/green onions, sliced diagonally into 1 to 2-inch pieces, green and white parts included
  • 1/2 teaspoon sesame oil, optional

Directions

  1. If you’re starting with pork chops, get them thin before slicing. Chops are often sold at about 1/2 inch thick or about 1 inch thick; for a thick boneless chop, cut it horizontally into 2 thinner pieces. If you’re using pork loin, slice it into 1/2 inch thick pieces.
  2. Place the pork between sheets of plastic wrap or wax paper, then flatten it with a meat mallet, a rubber mallet, or, in a pinch, an empty wine bottle. This tenderizes the meat, and you’re aiming for about 1/4 inch thick.
  3. Slice the pork against the grain into slender strips about 1 1/2 inches long.
  4. For the 10 min marinade, whisk the soy sauce, sugar, and cornstarch together in a large bowl. Add the pork strips, toss until every piece is coated, and let it sit for at least 10 minutes.
  5. Set a wok or large sauté pan over high heat and add the peanut oil. Once the oil shimmers but has not begun to smoke, put in the garlic and stir-fry until the edges just start to brown, about 30 seconds.
  6. Add the pork strips and keep them moving until the meat loses its raw color, about 90 seconds.
  7. Add the sliced green onions and stir-fry for 1 more minute, or until they soften and droop. Take the pan off the heat, then mix in the sesame oil, if you’re using it.
  8. Serve right away. It can be served on its own for paleo and low carb, or over rice.
