Pull-Apart Stuffing Rolls

Ingredients

  • 4 tablespoons butter, divided
  • 8 ounces sage sausage or breakfast sausage, removed from casings
  • 1 small onion, finely chopped
  • 1 rib celery, finely chopped
  • 4 medium cloves garlic, finely chopped
  • 1/4 cup minced fresh sage leaves
  • 1/4 cup minced fresh parsley leaves
  • Kosher salt and freshly ground black pepper
  • All-purpose flour, for dusting
  • 1 pound homemade or store-bought pizza dough
  • 2 tablespoons extra-virgin olive oil

Directions

  1. In a large skillet set over medium-high heat, melt 2 tablespoons (28g) butter. Add the sausage and use a sturdy whisk or potato masher to crumble it finely, keeping the biggest bits no larger than 1/4 inch. Cook, stirring often, until just a few pink pieces are left, about 8 minutes. Stir in the onion, celery, garlic, and sage, then continue cooking and stirring until the vegetables have softened, about 10 minutes. Mix in the parsley, then season with salt and pepper to taste. Scrape everything into a large bowl and let it cool completely.
  2. As the filling cools, shape the dough. Lightly flour your work surface and cut the dough into 2 equal portions. Take one portion and roll or stretch it into a long oval-ish strip about 8 inches long and 4 inches wide. Cut it crosswise with a bench scraper or knife into 12 strips. Do the same with the remaining dough.
  3. Tie the strips into knots, then add them to the bowl with the sausage mixture. Using your hands, gently toss and fold until the knots are well coated all over. Butter a 9- by 13-inch baking dish with 1 tablespoon (14g) butter. Arrange the knots in the dish in one layer. Drizzle the olive oil over the top, cover the dish snugly with plastic, and leave it until the dough has doubled, about 4 hours. Alternatively, chill it until doubled, 12 to 16 hours.
  4. When you are ready to bake, place a rack in the center of the oven and heat the oven to 425 degrees F (220 degrees C). Take off the plastic. Bake the rolls until they are browned and crisp, 25 to 30 minutes.
  5. Just before the rolls are done, melt the remaining tablespoon butter in the microwave or on the stovetop. Take the rolls out of the oven and brush them right away with the melted butter. Serve with gravy and cranberry sauce on the side.
