Apple Walnut Stuffing

Ingredients

  • 4 Tbsp butter
  • 1 yellow onion
  • 3 ribs celery
  • 2 apples
  • 1/2 tsp dried sage
  • 3 cups water
  • 2 6 oz. boxes stuffing mix
  • 1/2 cup walnuts

Directions

  1. Chop the onion and celery into small pieces. Put the butter, onion, and celery in a large pot, set it over medium heat, and cook until the onion turns soft and see-through, about 5 minutes.
  2. As the onion and celery cook, core the apples and cut them into small dice. Stir the apples and dried sage into the pot, then keep sautéing for 1-2 minutes, just long enough for the apples to relax a little.
  3. Pour in the water, cover the pot, raise the heat to high, and let it come to a boil. When it is boiling, stir in the stuffing mix from both boxes just until combined, then shut off the heat, put the lid back on, and leave the stuffing alone for 5 minutes.
  4. While the stuffing soaks up the hot water, chop the walnuts. After the stuffing has rested for 5 minutes, uncover the pot, add the walnuts, and fold them in with a light hand so the texture stays fluffy instead of gummy.
  5. Serve right away, or bake it uncovered at 350ºF for about 15 minutes if you want the top to crisp.
