Quick Mushroom & Lime Salad
A quick savory mushroom salad tossed with lime, soy, herbs, chile and peanuts for a tangy, crunchy side.

Ingredients
- 8 green onions, thinly sliced
- Juice of one lime
- 1/2 serrano, seeded and minced
- 1 tablespoon soy sauce or coco aminos
- 1 tablespoon olive oil
- 1 pound mixed mushrooms, sliced 1/4-inch thick
- 1 cup chopped herbs
- 1/3 cup toasted peanuts or other nuts
- bonus : sprouts or micro greens
Directions
- In a large bowl, stir together the green onions, lime juice, serrano, and soy sauce, then leave it nearby.
- Pour the olive oil into a large skillet and warm it over medium high heat. Add the mushrooms, sprinkle in a generous pinch of salt, and cook without fussing with them at first; stir after 4-5 minutes. Continue cooking until they give off their moisture and begin to take on color. Once they are deeply golden, take the skillet off the heat.
- Spoon the mushrooms into the green onion mixture and toss gently. If you are adding tofu or tempeh, add it now. Fold in the herbs and peanuts, taste, and add more soy sauce if it needs it. Transfer everything to a platter and finish with micro greens or sprouts.
