Ingredients
- 2 cups raw almonds, germinated
- 35 pitted dates, soaked for 1 hour and drained
- 1 tablespoon fresh lime juice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 2 cups raw pecans, germinated
- Cold-pressed extra-virgin olive oil, to grease your pan
Directions
- Add the almonds and 10 dates to a food processor, then pulse and process until the mixture looks roughly chopped and starts sticking to itself. Rub a little cold-pressed olive oil over the base of a 9-inch square brownie pan or pie plate so the crust releases more easily. Press the almond-date mixture across the bottom of the pan and up the sides, shaping it into an even crust, then put it aside.
- Place the remaining dates in a blender or small food processor with the fresh lime juice, cinnamon, salt, and vanilla. Blend until the filling is smooth and consistent throughout. Spoon it over the crust and smooth it out evenly. Scatter the raw pecans over the top and gently press them into the filling. Slice into 2-inch squares and serve.
