Best Fresh Apple Bundt Cake
A moist cinnamon apple Bundt cake studded with coconut and walnuts or pecans, finished with a buttery brown sugar glaze that soaks into every slice.

Ingredients
- 1 1/2 cups vegetable oil
- 2 cups of sugar
- 3 eggs, slightly beaten
- 3 cups of white flour
- 1 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 cups chopped, peeled apples
- 1 cup of sweetened shredded coconut
- 1 cup of chopped nuts – walnuts or pecans
- 1/2 stick sweet butter
- 1 cup brown sugar
- 3 tablespoons milk
Directions
- Preheat your oven to 350 degrees F. For the batter, beat the sugar and oil together until combined, then mix in the eggs. In another bowl, sift the flour, baking soda, salt, and cinnamon.
- Add the sifted dry mixture to the oil, sugar, and egg mixture in thirds, beating after each addition so everything comes together.
- Stir in the vanilla, apples, coconut, and chopped nuts. Bake the cake at 350 degrees F in a greased and floured bundt cake pan for about 1 hour.
- Check near the center with a long, thin bamboo skewer or toothpick to be sure the cake is baked through.
- Once the cake is cool enough to handle, carefully turn it out of the pan. Set it on a rack and let it cool completely. If the batter has risen quite a bit around the middle of the bundt ring, use a bread knife to gently even it out so the cake sits flat.
- For the glaze, blend the glaze ingredients together and cook until melted. Move the cake to its serving dish.
- Poke holes all over the top of the cake with a fork, so the glaze can sink in nicely once you add it.
- Brush the glaze generously over the surface of the cake with a pastry brush, or spoon it over the top if that’s easier.
