Almond Cherry Quinoa Cookies

Ingredients

  • 1/2 cup dried cherries
  • Boiling water
  • 1 cup white whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • 1/4 cup honey
  • 1/4 cup light brown sugar
  • 1 egg
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1 cup cooked quinoa, cooled
  • 1/2 cup sliced almonds

Directions

  1. Put the dried cherries in a small bowl, pour boiling water over them to cover, and leave them for 10 minutes. Drain them well.
  2. In a medium bowl, whisk the flour, baking powder, and salt together.
  3. In a large bowl, whisk the melted butter with the honey and brown sugar until the mixture looks blended and a little paler. Whisk in the egg, then add the almond and vanilla extracts and whisk again. Stir in the flour mixture.
  4. Fold in the quinoa, almonds, and drained cherries until they are distributed throughout the dough. Cover the bowl with plastic wrap and chill the dough in the refrigerator for 30 minutes.
  5. Heat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheets. Bake until the cookies are golden, about 12 minutes.
