Directions

Preheat oven to 350°F . Grease a baking sheet. In a medium bowl, beat together the egg yolk and vanilla extract until blended. Set aside. In a large bowl, cream together the eggs and sugar until light and fluffy. Beat in the butter until well blended. Gradually add in the egg yolk mixture and mix until combined. Slowly stir in the flour until just blended. Do not overmix! Roll out dough on a lightly floured surface to about ¼ inch thick. Cut into desired shapes with cookie cutters or use a knife to cut into strips for candy canes. Place cookies onto prepared baking sheet about 1 inch apart from each other. Bake for 8-10 minutes or until lightly golden brown around edges. Allow cookies to cool completely before decorating with icing or sprinkles if desired.
