In a medium saucepan over medium heat, melt the butter.
Once melted, add the cornstarch and whisk until combined.
Slowly pour in the milk while whisking continuously until there are no lumps.
Bring to a simmer and cook for 3-5 minutes or until thickened, stirring occasionally.
Remove from heat and stir in the cheese until melted and smooth.
Serve over fries or nachos as desired!.
