Thai Cucumber Salad

A crisp cucumber salad tossed with tangy rice vinegar, sesame oil, scallions, peanuts, and a little chile heat for a quick cool-crunch side.

Thai Cucumber Salad

Ingredients

  • 1/3 cup rice vinegar
  • 2 Tbsp granulated sugar
  • 1/2 tsp toasted sesame oil
  • 1/4 to 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 2 large cucumbers
  • 3 green onions
  • 1/4 cup chopped peanuts

Directions

  1. Whisk the sugar and salt into the rice vinegar in a small bowl, then mix in the sesame oil and red pepper flakes. Let the dressing hang out while you take care of the rest.
  2. Peel the cucumbers, then slice them however you like. Transfer the slices to a large bowl.
  3. If you want smaller pieces, chop the peanuts a bit more. Slice the green onions.
  4. Pour the dressing over the cucumbers, then add the peanuts and green onions. Toss everything together. Serve it right away, or chill it until you’re ready to eat. Before serving, give the salad a quick stir so the dressing and flavors are spread back through the bowl.
