Microwave Nachos for One
A quick single-serve plate of corn chips layered with beans, cheese, and jalapeños for when you want nachos without turning on the oven.

Ingredients
- 12 hearty corn chips
- 1/4 cup refried beans
- 2 to 4 ounces grated Longhorn, Colby, jack, cheddar, or Oaxaca cheese
- 12 pickled jalapeño slices
Directions
- Set the chips on a microwave-safe plate so they sit in one flat layer. Cook on high power until they give off a warm, toasted-corn smell; that will be about 30 seconds to 1 minute.
- Take the plate out of the microwave, then add 1 teaspoon of beans to each chip, followed by a little shredded cheese and a jalapeño slice.
- Put the plate back in the microwave and cook for 30 seconds. Keep cooking in 15-second bursts until the cheese is fully melted and bubbling. Eat, and make another round if needed.
