Apple Cinnamon Kringle
Flaky sour cream pastry wraps brown-butter cinnamon apples, baked golden and drizzled with vanilla icing for a cozy, tender-crisp kringle.

Ingredients
- For the Kringle:
- 1/2 cup sour cream
- 3/4 teaspoon vanilla
- 1 cup all-purpose flour
- 8 tablespoons unsalted butter, chilled and cut into 1 tablespoon chunks
- 1 egg
- 1 tablespoon sugar
- For the Kringle Filling:
- 4 tablespoons unsalted butter
- 2 medium apples, diced
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon cornstarch
- For the Kringle Icing:
- 1/2 cup powdered sugar
- 1/2 tablespoon milk
- 1/2 teaspoon vanilla
Directions
- Combine the sour cream and vanilla in a small bowl, then put it aside for the moment. Cut the flour and chilled butter together with a pastry blender, or give them several quick pulses in a food processor, until the butter is in little pea-sized pieces. Add the sour cream mixture and stir until the dough comes together smoothly. Form it into a disk, flatten it just a bit, cover it, and refrigerate for at least 2 hours or overnight.
- While the pastry chills, make the filling. Melt and brown the butter in a small saucepan over medium heat, swirling the pan now and then as it cooks. When the butter is browned, stir in the apples, sugar, cinnamon and vanilla. Let the apples cook until they soften, then whisk in the cornstarch right away. Continue cooking until the filling has thickened, about 5 minutes more. Take it off the heat, spoon it into a bowl, cover it, and refrigerate until fully chilled, about 2 hours.
- Set the oven rack in the center of the oven and preheat to 450 degrees F. In a small bowl, whisk the egg and sugar together for the egg wash, then set it aside. On a floured surface, roll the chilled dough into a 12 by 6 inch rectangle. Spoon the filling in a narrow strip down the middle, keeping two inches clear on both sides and an inch and a half open at each end. Fold the sides over the center, then bring the ends up and press gently to seal. Brush the pastry with the egg wash.
- Bake the kringle on a parchment lined cookie sheet for 10 to 15 minutes, until golden brown. Right before it comes out of the oven, whisk the confectioners sugar, milk and vanilla together in a small bowl to make the icing. Drizzle the icing over the warm kringle, then let it cool on a wire rack. Store it in a covered container. It is best within a day.
