Ingredients
- 1 pound cooked pinto beans, drained
- 2 tablespoons lard
- 1 onion, minced
- 2 cloves garlic, minced
- 1/2 cup water
- Salt
- 1 jalapeno pepper, diced, optional
- Cilantro, chopped, optional
- Lime juice, optional
Directions
- Warm the lard in a large iron skillet set over medium heat. Once it liquefies, add the onion and cook it until it turns translucent. Stir in the garlic and cook for 30 seconds, just until the aroma really comes through.
- Add the beans and the water to the skillet. Cook everything for a few minutes, then start breaking the beans down. Use a potato masher or a large wood spoon, and keep mashing until the beans are as smooth or chunky as you like.
- Add salt to taste, then finish with any combination you want of cilantro, jalapeno, or lime juice, or skip them altogether.
