Roast Chicken with Cilantro and Lime

Ingredients

  • 1 whole chicken, 4-5 pounds
  • 1/2 cup fresh lime juice
  • 1/4 cup olive oil
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • 2 T dried cilantro
  • 2 tsp. Green Tabasco Sauce

Directions

  1. Take the giblets out of the chicken cavity and throw them away. Wash the chicken with warm water, both inside and outside. If you’d like, truss the chicken with kitchen string.
  2. Stir the marinade ingredients together. Place the chicken in a large Ziploc bag, then pour the marinade in over it. Refrigerate the chicken in the marinade for 6-8 hours, or a bit longer if needed.
  3. When it’s time to cook, set the oven to 450 to preheat. Lift the chicken out of the marinade and wash it with warm water. This is optional, but rinsing away the cilantro helps keep it from burning.
  4. Allow the chicken to sit until it reaches room temperature. For easier cleanup, you can line the roasting pan with foil.
  5. Cook the chicken, figuring 15-20 minutes per pound. If you’re using a meat thermometer, check for 160F/72C, the recommended minimum internal temperature for roasted or grilled chicken.
  6. Rest the chicken for 10 minutes before serving.
