Prep 20 min · Makes 8 servings

Ingredients
- 1/2 head green cabbage, thinly sliced then coarsely chopped
- 1/2 head red cabbage, thinly sliced then coarsely chopped
- 1 cup grated or shredded carrots, lightly chopped
- 1/2 cup sliced green onion
- 4 T mayo
- 3 T fresh squeezed lime juice
- 1 tsp green Tabasco sauce
- Salt and fresh ground black pepper to taste
Directions
- Cut the 1/2 head of green cabbage and the 1/2 head of red cabbage into thin shreds, then give them a rough chop and transfer them to a bowl.
- Grate the carrots and chop them, or start with matchstick carrots and cut them down a bit.
- Slice the green onions, then add them to the bowl along with the carrots and cabbage.
- In a separate bowl, whisk the mayo, light mayo, lime juice, and Green Tabasco Sauce until smooth. Taste it, and decide whether you want a little more tang or heat.
- You can pause here and refrigerate the salad components until serving time. If storing it for a few days, keep the cabbage mixture sealed in a container or bag and hold the dressing separately.
- Right before serving, toss the cabbage mixture with as much dressing as you like, add salt and fresh-ground black pepper to taste, and bring it to the table.
