Roasted Apple Cranberry Relish

Ingredients

  • 12 oz bag fresh cranberries
  • 3 medium apples
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp lemon juice

Directions

  1. Heat your oven to 350ºF. Rinse the cranberries, then tip them into a large 8x13-inch casserole dish, or a 2-3 quart dish. Peel and core the apples, then dice them into pieces about as big as the cranberries. Add the apples to the dish with the cranberries.
  2. Sprinkle in the brown sugar, cinnamon, and cloves, then add the lemon juice. Give everything a good toss so the fruit is evenly coated.
  3. Bake the fruit in the hot oven for 45-55 minutes, until it cooks down into a thick, spoonable, jammy relish. Stir once at 30 minutes, then stir again at 45 minutes and see how it looks. Taste, then add more sugar or lemon juice if it needs a little nudge. You can serve it warm, or refrigerate it for later.
