Ingredients
- 1 medium head garlic
- 1 tsp olive oil
- 1 head cauliflower, cut from core, cut into florets
- 1/3 cup finely shredded parmesan cheese
- 2 Tbsp butter
- 2 Tbsp plain Greek yogurt or sour cream
- 1 tsp finely minced fresh thyme
- Salt and freshly ground black pepper
- Minced fresh parsley, for garnish, optional
Directions
- Set your oven to 400 degrees. Slice 1/2-inch off the top of the garlic head so you can see the cloves. Place the garlic on foil, drizzle it with the olive oil, and seal the foil around it. Roast it in the hot oven for about 40 – 45 minutes, until the cloves are tender and just barely golden.
- Pour about 1/2-inch of water into a large pot and bring it to a boil. Set a steamer basket in the pot, add the cauliflower to the basket, and steam the cauliflower for about 10 – 13 minutes, until it is very tender.
- Squeeze the garlic cloves up and out of their skins, then put them in a large food processor. Add the cauliflower, parmesan, butter, Greek yogurt, thyme, and salt and pepper to taste.
- Cover the food processor, then remove the center insert from the lid since the mixture is hot. Process for about 1 minute, scraping the sides as needed, until everything is smooth.
- Serve warm, with parsley if you want it.
