Ingredients
- 2 cups fresh strawberries, hulled and halved
- 2 tablespoons honey
- 1 teaspoon olive oil
- 1/4 cup white miso paste
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 4 large egg yolks
Directions
- Heat your oven to 375ºF (190ºC).
- Trim the strawberries, then cut them into quarters. Put them in a roomy, shallow baking dish with tall sides, choosing one large enough to hold the berries in a single layer with a little room around them, and toss them with the golden syrup, balsamic vinegar, and black pepper.
- Arrange the berries over the base of the dish and roast them on an upper oven rack for about 30 to 40 minutes, stirring 1 or 2 times as they cook, until the fruit is thoroughly softened and the juices have reduced and thickened. Take the dish out of the oven and transfer everything to a bowl. When the berries have cooled, use scissors to cut them into smaller pieces right in the bowl. If you want to work ahead, you can make the berries up to 3 days in advance and refrigerate them.
- For the ice cream custard, warm the milk and sugar together in a saucepan.
- As the milk heats, set up an ice bath: nestle a 2-quart (2l) bowl inside a larger bowl that is partly filled with ice and water. Place a strainer over the smaller bowl, then pour the cream into that bowl.
- In another bowl, whisk the egg yolks with the miso. Slowly stream in some of the warm milk while whisking the whole time, then scrape that mixture back into the saucepan with the rest of the milk.
- Keep the pan over low heat, stirring constantly with a heat-resistant spatula and dragging it along the bottom of the pan, until the custard is thick enough to leave a coating on the spatula. Pour it through the strainer into the cream. Stir the bowl over the ice bath until the custard is cool, then mix in the vanilla extract and refrigerate until very cold, preferably overnight.
- When you are ready to finish, stir the roasted strawberries into the miso custard, then churn it in your ice cream maker according to the manufacturer’s instructions.
