Ingredients
- 2 1/2 lbs sweet potatoes or yams, peeled and diced into 3/4-inch to 1-inch pieces
- 5 Tbsp unsalted butter, diced into 1 Tbsp pieces and melted
- 3 Tbsp honey
- 1 tsp cinnamon
- 1/2 tsp salt, or to taste
Directions
- Heat the oven to 350 degrees. Coat a 13 by 9-inch baking dish with non-stick cooking spray.
- In a small bowl, whisk the melted butter with the honey, cinnamon and salt until smooth.
- Add the sweet potatoes to the prepared baking dish. Pour the honey butter over them, then toss until the pieces are well coated.
- Arrange the sweet potatoes in a level layer, knowing they will overlap a bit. Bake until tender, stirring after each third of the baking time, which means twice total, about 50 – 55 minutes altogether.
- Before serving, turn the sweet potatoes through the honey mixture collected in the bottom of the dish, then serve warm.
