Ingredients
- 2 tablespoons extra virgin olive oil
- 1 pound sugar snap peas, strings removed
- 3-4 scallions or green onions, sliced on the diagonal
- Salt
- A pinch of sugar
- Zest of a lemon
- 3 tablespoons chopped fresh mint
- Black pepper to taste
- Lemon juice to taste
Directions
- Set a large sauté pan over high heat and warm it for 1 minute. Pour in the olive oil, and once it looks glossy and shimmering, about 1-2 minutes, add the sugar snap peas. Turn them in the oil, season with salt, and toss once more. Leave them alone in the pan for 1 minute.
- Add the green onions, then scatter in a pinch of sugar. Toss everything together and cook for 1 minute. Toss again, then let the vegetables sit without stirring for 2 minutes.
- Take the pan off the heat. Stir in the lemon zest and mint, then finish with black pepper and lemon juice to taste. Serve at once.
