My Love for Mojo Sauce
A bright, garlicky mojo sauce with citrus, herbs, and olive oil, plus a smoky red pepper version for spooning over grilled meats or vegetables.
Prep 30 min · Makes about 5 cups

Ingredients
- 4 heads garlic, peeled
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 1 cup freshly squeezed sour orange juice *
- 1/2 cup freshly squeezed lime juice
- 1 onion, roughly chopped
- 2 teaspoons dried oregano
- 1 cup olive oil
- 2 red bell peppers, seeds removed and roughly chopped
- 4 cloves garlic
- 1 bunch cilantro
- 1/2 teaspoon cayenne pepper
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 dried red chile, seeds removed
Directions
- Add the garlic, salt, pepper, orange juice, lime juice, onion, and oregano to a food processor. Blend everything until the mixture becomes a smooth paste, about 2 to 3 minutes.
- With the processor running, drizzle the olive oil in through the feed tube, taking it slowly so the sauce comes together and emulsifies fully.
- Refrigerate the sauce until you are ready to use it.
- For the Spicy Red Mojo Sauce, which makes 2 cups and is from Stacy Camacho for Chile Pepper magazine, place the bell pepper, garlic, cilantro, salt, cayenne, cumin, paprika, and chile pepper in a food processor. Blend until you have a smooth paste, about 2 to 3 minutes.
- While the processor runs, pour the olive oil in gradually through the feed tube until the mixture is completely emulsified.
- Transfer the sauce to the refrigerator and chill until needed.
