Sheet Pan Pizza with Roasted Cauliflower and Greens

Ingredients

  • 1/2 large head cauliflower
  • 6 tablespoons olive oil, divided
  • 1/2 tsp salt
  • 1/4 tsp. pepper
  • 1 recipe No-Knead Whole Wheat Pizza Dough, or store-bought dough
  • 1 cup grated Parmesan
  • 12 ounces fresh mozzarella, torn into pieces
  • 2 tablespoons drained green peppercorns in brine, or drained capers
  • 3 handfuls baby greens such as arugula, kale, or spinach
  • 1 tablespoon balsamic vinegar

Directions

  1. Preheat the oven to 450ºF and move a rack to the lowest position. Trim the outer leaves from the cauliflower, then cut the head in half. Slice one half into pieces about 1/4-inch thick, and set the other half aside for another use, or roast it all now and save half for another meal. Don’t worry if some little florets break loose as you slice.
  2. Arrange the cauliflower slices, along with any escaped florets, on a rimmed baking sheet. Drizzle with 2 tablespoons of the oil, then use your hands to rub it over the cauliflower so both sides are coated. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  3. Slide the pan onto the lower rack and roast for 20 minutes, until the cauliflower is tender. Let it cool a bit right on the pan, then break or cut it into smaller pieces.
  4. If you’re working ahead, you can refrigerate the cauliflower at this point for up to 5 days.
  5. Wipe the baking sheet clean. Set the dough in the middle of the pan and drizzle it with 2 tablespoons of the oil. Turn the dough so it’s nicely coated, letting some of the oil spread across the baking sheet too.
  6. Gently stretch the dough out toward the edges of the baking sheet. If it keeps pulling back or doesn’t want to move, cover it with plastic wrap and let it rest for 10 minutes, then keep stretching. Turn the oven to 500ºF.
  7. Brush the surface of the dough with 1 tablespoon of oil, then scatter the grated Parmesan over the top. Add the mozzarella, then the cauliflower, and sprinkle the peppercorns or capers evenly over everything.
  8. Place the pan on the lowest shelf of the oven and bake for 15 minutes, until the cheese is melted and the pizza is golden brown.
  9. In a bowl, toss the greens with the remaining tablespoon of the oil, the vinegar, and salt and pepper. Pile the greens over the hot pizza so they soften slightly from the heat. Cut into squares and serve hot.
