Skillet Loaded Taco Potato Chip Nachos

Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 2 cups shredded cheese
  • 1 can black beans, drained and rinsed
  • 2 cups crushed potato chips
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • Chopped fresh cilantro, for garnish, optional

Directions

  1. Set your oven to 375 degrees F so it can heat while you start the skillet.
  2. Warm the olive oil in a large skillet on medium-high. Stir in the diced onion, and cook until it turns tender, about 5 minutes.
  3. Crumble in the ground beef, then sprinkle in the taco seasoning. Continue cooking until the meat is browned, about 8 minutes, and pour off any extra fat in the pan.
  4. Line a large baking sheet with parchment paper or aluminum foil, then cover it with the crushed potato chips. Layer on the black beans, cooked ground beef, shredded cheese, salsa, and sour cream.
  5. Transfer the pan to the oven and bake for 15 minutes, or until the cheese has melted and is bubbling. Finish with chopped fresh cilantro, if using, and serve warm.
