Ingredients
- 2 pounds boneless, skinless chicken breasts
- 6-8 cups cut up broccoli florets
- Sesame seeds, for garnish
- Sriracha Sauce for serving, optional
- 3/4 cup sugar-free apricot preserves
- 3 T soy sauce, gluten-free if needed
- 2 tsp. sesame oil
- 1 T Chili Garlic Sauce
- 1 tsp. garlic powder
- 1 tsp. ginger puree
- 3 T Tamarind Sauce
- 2 T Golden Monkfruit Sweetener
Directions
- Trim away the fat and any bits you do not want from the chicken breasts, then cut the chicken into generous bite-size pieces.
- Coat the slow cooker with non-stick spray, then add the chicken.
- For the sauce, whisk Sugar-Free Apricot Preserves with soy sauce and sesame oil. Add Chile Garlic Sauce, garlic powder, and ginger puree. If you are skipping Tamarind Sauce, use additional apricot preserves instead. Whisk in the Golden Monkfruit Sweetener or the sweetener you prefer.
- Pour the sauce onto the chicken, then stir until the pieces are evenly coated.
- Cook on HIGH for about 2 1/2 hours, until the chicken is cooked through. It may not look especially pretty right away, since the sauce can have little cooked-protein bits in it.
- Set a colander over a container, drain the chicken, and save the sauce. Strain the sauce again through a fine strainer.
- Return the chicken to the slow cooker and switch it to low so it stays warm.
- Simmer the sauce over low heat until it has reduced and thickened to your liking, about 20 minutes.
- Add the thickened sauce to the slow cooker and stir very gently so the chicken gets coated. If you stir with too much enthusiasm, the chicken will break into shreds.
- When the sauce is almost reduced, steam or microwave the broccoli until it is as crisp as you like. For the microwave method, use high power for a little over a minute with the broccoli in an 8-cup glass measuring cup.
- Divide the broccoli between bowls, then spoon the chicken and sauce over the top.
- Sprinkle with sesame seeds, and serve Sriracha Sauce on the side for anyone who wants a little extra heat.
