Thai Chicken Pizza

Ingredients

  • 1 batch 8 pcs naan
  • 1/2 cup hoisin sauce
  • 1/2 cup peanut butter
  • 2 inches fresh ginger
  • Approx. 2 Tbsp sriracha hot sauce
  • 2 medium chicken breasts
  • 2 cups shredded mozzarella
  • 1 medium red bell pepper
  • 1 small red onion
  • 1 bunch fresh cilantro
  • To taste salt & pepper

Directions

  1. Cut away any extra fat from the chicken breasts, then sprinkle them with salt and pepper. Cook them on a countertop grill until they are done in the center, about 7 minutes each, and let them cool.
  2. As the chicken cooks, make the peanut sauce. In a bowl, stir together the hoisin sauce, peanut butter, and 1/2 tsp sriracha sauce. Remove the peel from the ginger and grate it right into the same bowl, then pour in about 1/3 cup hot water and whisk until the sauce turns smooth. Put it aside for now.
  3. Heat the oven to 400 degrees. Cut the cooled chicken into small bites and move it to a bowl. Add enough sriracha sauce to cover the pieces, about 1.5 Tbsp, more or less. Slice the red onion and red bell pepper thinly.
  4. For each naan, cover the top with about 2 Tbsp peanut sauce. Add about 1/4 cup shredded cheese, then scatter on some sriracha-coated chicken, red bell pepper, and red onion.
  5. Set the pizzas on a perforated pizza pan or straight on the oven rack. Bake until the cheese has melted and is bubbling, about 10 minutes. Once they come out of the oven, finish them with fresh cilantro leaves.
