Ingredients
- 3 pounds carrots, peeled and cut 1/2-inch thick on a bias
- 1 1/4 cup water
- 2 teaspoons kosher salt, divided
- 2 tablespoons unsalted butter, melted
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1 tablespoon chopped fresh sage
- 1/4 teaspoon black pepper
Directions
- Set the carrots in your slow cooker, then pour in the water and sprinkle with 1 teaspoon kosher salt. Put the lid on, choose the low setting, and let them cook for 4 to 6 hours, until a fork slides into the carrots easily.
- Pour off the water, then put the carrots back in the slow cooker. In a separate bowl, whisk the remaining salt with the melted butter, honey, Dijon mustard, sage, and black pepper until everything comes together nicely.
- Add the honey-Dijon mustard glaze to the carrots and turn them gently until every piece is coated. Taste, then adjust with more salt and pepper if you like.
- Turn the slow cooker down to warm. You can serve the carrots right away, or cover them and keep them on warm for 1 to 2 hours.
