Smoky Parmesan Roasted Cauliflower

Ingredients

  • 1 Tbsp smoked paprika
  • 1/2 tsp oregano
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • Freshly cracked pepper
  • 1/4 cup grated Parmesan
  • 1 1/2 Tbsp olive oil
  • 1 head cauliflower

Directions

  1. Set your oven to 400 degrees. Line a baking sheet with foil, then lightly mist the foil with non-stick spray.
  2. In a small bowl, stir together the grated Parmesan, oregano, smoked paprika, garlic powder, salt, and freshly cracked pepper from giving a pepper mill 10-15 cranks.
  3. Pull away the cauliflower leaves, then cut the head into small florets. Pile the florets into a large bowl, pour the olive oil over them, and toss until the oil has reached all the pieces. Tip in about 3/4 of the Parmesan spice mixture, and toss again so the cauliflower is coated.
  4. Arrange the florets across the prepared baking sheet without piling them up. Scatter any Parmesan and spices left in the bowl over the cauliflower, then dust the top with the reserved Parmesan spice mixture.
  5. Once the oven is fully hot, roast the cauliflower for 40-45 minutes; you’re looking for tender pieces with browned edges. The Parmesan will melt a bit and turn crisp. Serve it hot, right from the oven.
