Ingredients
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 1/2 Tbsp stone ground or whole grain mustard
- 1/4 tsp garlic powder
- 1/8 tsp salt
- Freshly cracked pepper
- 3 bell peppers, any color
- 1 onion
- 5 bratwurst links
- 5 buns
- 2 oz. cheddar, optional topping
- 4 Tbsp mustard, optional topping
Directions
- Heat the oven to 400ºF. Combine the olive oil, red wine vinegar, stone ground mustard, garlic powder, salt, and pepper in a small bowl, stirring until the dressing looks blended. Put it aside for now.
- Cut the bell peppers and onion into strips about 1/4-inch wide, then spread them across a large baking sheet. Arrange the bratwurst links on the same pan. Pour the vinaigrette over everything, then turn and toss until the sausages and vegetables are nicely coated.
- Slide the pan into the oven and roast for 20 minutes. Pull it out, stir everything around, and send it back to the oven for another 20-25 minutes, until the bratwurst and vegetables are browned at the edges.
- Fill the buns with the bratwurst, peppers, and onions, adding shredded cheddar on top if you want it. Return them to the oven for about 5 minutes, just long enough for the cheese to melt and the buns to toast. Finish with extra mustard right before serving.
