Smoky Roasted Sweet Potatoes

Ingredients

  • 2 medium sweet potatoes, about 2 lbs.
  • 2 Tbsp olive oil
  • 1 Tbsp brown sugar
  • 1 tsp smoked paprika
  • 1/8 tsp garlic powder
  • 1/8 tsp cayenne pepper, optional
  • 1/4 tsp salt
  • Freshly cracked pepper, 10-15 cranks of a pepper mill

Directions

  1. Heat your oven to 400 degrees. Wash the sweet potatoes well, peel them, and slice them into 1/8-inch thick rounds. In a small bowl, mix the brown sugar, smoked paprika, garlic powder, cayenne pepper, salt, and freshly cracked pepper.
  2. Put the sliced sweet potatoes in a large bowl and pour the olive oil over them. Add the spice mixture, then toss until every slice has a good coating of oil and seasoning.
  3. Set the seasoned slices in a casserole dish, lined up in a row like cards in a deck. No need to make them fussy or perfect.
  4. Cover the casserole dish with foil and roast it in the hot oven for 30 minutes. Take off the foil and continue cooking for 15 minutes more. Check the sweet potatoes with a fork; if they are still firm, give them another 10-15 minutes in the oven. If the tops start getting too dark during that last stretch, put the foil back on to slow the browning.
