Snowman Chocolate Icebox Cake

Ingredients

  • 4 cups heavy whipping cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 3 packages chocolate wafer cookies
  • Candy for decorations, such as peppermint sticks, Dots, mini-marshmallows, licorice sticks, Junior Mints, and pretzel logs

Directions

  1. Cut 1 6-inch circle and 1 8-inch circle from baker’s parchment to use as guides. Set them on a platter with the smaller circle at the top and the larger circle directly underneath it.
  2. In a chilled mixer bowl with chilled beaters, beat the cream, sugar, and vanilla until soft peaks form. Stop there; you don’t want to over whip it.
  3. Dab a little whipped cream underneath each parchment circle on your platter so they stay in place. Spread about a teaspoon of whipped cream on each cookie, stack 4 to 5 cookies together, and stand the stack upright on its edges along the outside of one circle. Keep sandwiching and stacking the cookies around the circle and through the middle until the circle is covered. Do the same thing to put together the second circle.
  4. Using a spatula, spread the remaining whipped cream over the tops and sides of the circles to create your snowman/woman/person.
  5. Refrigerate the cake for at least 4 hours or overnight.
  6. Add the candy decorations shortly before serving, especially if you’re using candy that may soften or bleed color into the whipped cream as it sits, like dots or some hard candies.
