Ingredients
- 2 packages cream cheese, softened
- 2/3 cup sugar
- 3 large eggs
- 2/3 cup buttermilk
- 2 teaspoons vanilla extract
- Pinch of salt
- 2 cups chopped fresh or frozen strawberries, hulled and roughly chopped
- 2 tablespoons sugar
- 1 tablespoon lemon juice
- 1 cup crumbled graham crackers
Directions
- Fill a pot with water and attach your immersion circulator. Set it to 176 degrees F and wait for the bath to reach temperature. Check that the water level is high enough to fully submerge the jars.
- Using a stand mixer fitted with the paddle attachment, or a hand mixer, beat the cream cheese and sugar on medium speed until pale and airy. Add the eggs one at a time, mixing after each addition until incorporated.
- Pour in the buttermilk gradually, mixing on low until the batter comes together. Add the vanilla and salt, then continue mixing until the texture is smooth and uniform. Pause the mixer a couple times to scrape the bowl, so no sneaky pockets of cream cheese are hiding on the sides.
- Pour the cheesecake batter into a large measuring cup or another container with a spout. Divide it among 6 jars, leaving about 1 1/2 inches of space at the top of each one. Close the jars with lids and bands so they are secure, but do not crank them down too tightly.
- When the water bath is ready, lower in the jars and cook for 90 minutes. Carefully take the jars out of the water and let them cool. Chill them in the refrigerator so the cheesecake can fully set before serving, though room temperature works too.
- For the strawberry topping, combine the strawberries in a small pot with the sugar, lemon juice, and salt over low heat. Bring the mixture to a gentle simmer, then cook for 2 to 3 minutes, just until the berries begin to soften and break down while still staying loose enough to spoon. This is a topping, not jam, so stop before it gets too cooked down. Let it cool to room temperature.
- To serve, spoon a generous amount of the strawberry topping onto each jar, then add a few spoonfuls of crumbled graham crackers.
