Ingredients
- 3 Tbsp dark sesame oil
- 1 Tbsp minced garlic
- 1 lb fresh spinach
- 1 Tbsp sugar
- 1 Tbsp soy sauce
- Salt to taste
- 1 Tbsp toasted sesame seeds
Directions
- Toast the sesame seeds first if they aren’t already done. Set a stick-free skillet over medium high heat, scatter in the raw sesame seeds, and keep them moving with a spatula or wooden spoon.
- They may pop and hop in the pan a bit, like tiny popcorn. They color fast, so keep stirring until they start to brown and smell toasty, then immediately tip them out of the skillet and into a separate bowl.
- Warm 2 tablespoons of the sesame oil in a large skillet over medium heat. When it’s hot, stir in the garlic. The moment the garlic starts sizzling, add the spinach and cook it, stirring now and then, until it has fully wilted. Reduce the heat to low.
- Mix in the sugar and soy sauce, then take the skillet off the heat. Season with salt to taste.
- Serve it hot, warm, at room temperature, or cold, finished with the remaining sesame oil and the toasted sesame seeds.
