Ingredients
- 1 large bunch broccolini, about 1 pound
- 1 T peanut oil or vegetable oil
- 2 tsp. minced garlic
- 2 tsp. minced ginger root
- 1/2 tsp. Chili Garlic Sauce
- 1/4 cup chicken stock
- 3 T oyster sauce, or a bit less
- 4-5 drops toasted sesame oil for drizzling over at the end
Directions
- Slice the broccolini into 2 inch lengths, then rinse it only if it needs it. If you do wash it, dry it well in a salad spinner or with paper towels before cooking.
- Set a wok or a large, sturdy frying pan over high heat for 1 minute. Pour in the peanut oil and let it warm for 1 minute more, then add the garlic, ginger root, and Chili Garlic Sauce if you’re using it. Stir-fry for 15 seconds.
- Add the broccolini to the pan and cook, stirring constantly, for about 2 minutes more. High heat moves quickly, so this is not the moment to wander off.
- Pour in the chicken stock or vegetable stock, cover the pan, lower the heat to medium-high, and cook for about 3-4 minutes, depending on how much crunch you want.
- Remove the lid and stir in the oyster sauce or Hoisin Sauce. Continue cooking over medium heat for 2-3 minutes more, until the broccolini is vivid green and still slightly tender-crisp.
- Finish with a drizzle of a few drops of sesame oil, then serve right away.
