Stir-Fried Lo Mein with Beef and Broccoli

Ingredients

  • For the beef:
  • 1/2 pound flank or skirt steak, sliced thin for stir-frying
  • 1/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon Shaoxing wine
  • 1/2 teaspoon light soy sauce
  • 1 teaspoon oil
  • 1/2 teaspoon cornstarch
  • For the sauce:
  • 1 tablespoon sesame oil
  • 2 teaspoon light soy sauce
  • 2 teaspoon dark soy sauce
  • 1 tablespoon of oyster sauce
  • 1 teaspoon Shaoxing wine
  • 1 tablespoon water
  • For the noodles:
  • Kosher salt
  • 1 pound fresh lo mein noodles
  • 4 tablespoons vegetable oil
  • 1/2 pound broccoli, cut into bite-sized florets
  • 3 medium cloves garlic, finely minced

Directions

  1. For the beef, place the beef in a small bowl with the salt, sugar, pepper, wine, soy sauce, oil, and cornstarch. Use your fingers to work everything over the slices so they are evenly coated, then put the bowl in the refrigerator to marinate.
  2. For the sauce, as the beef sits, add the sesame oil, the light soy sauce, the dark soy sauce, the oyster sauce, salt, sugar, wine, and water to a small bowl. Mix it together with a fork, then leave it nearby for cooking.
  3. For the noodles, fill a large pot with salted water and bring it to a boil. Add the noodles and cook them for about 3 minutes, stirring with chopsticks, until they are al dente. Pour them into a colander, rinse with cold water until cool, drain thoroughly, and set them aside.
  4. When you are ready to stir-fry, warm 2 tablespoons oil in a wok over high heat until it smokes. Add the beef and use a spatula to spread it into a single layer, then let it sear undisturbed for about 1 minute, just until lightly browned. Toss the beef and keep cooking, stirring often, until it is nearly cooked through, about 2 minutes total. Move it to a large bowl and set it aside.
  5. Pour another tablespoon oil into the wok and heat it over high heat until smoking. Add the broccoli, sprinkle in a couple pinches of salt, and stir-fry until it picks up a faint bit of color, about 30 seconds. Add 1/4 cup water and continue stirring until the broccoli has steamed and the water is gone, about 2 minutes. Transfer the broccoli to the bowl with the beef.
  6. Add the remaining tablespoon oil to the wok and heat it over high heat until smoking. Add the noodles, then use tongs or chopsticks to stir and lift them constantly until they are slicked with oil, about 1 minute. Pour in the sauce and keep everything moving until the noodles are evenly coated, about 1 minutes longer. Add the garlic, broccoli, and beef, and stir-fry until everything is combined and fragrant, about 1 minute longer. Serve immediately.
