Strawberry Rhubarb Lemonade
A bright strawberry rhubarb lemonade with lemon zest and vanilla, poured over ice for a tart, fruity, gently fragrant drink.

Ingredients

Directions
- Combine the water, rhubarb, sugar, 2 strips of zest, and vanilla in a saucepan. Set it over the heat and bring everything to a boil, stirring as it warms so the sugar melts, then cover the pan and let it simmer for 8 minutes.
- Add 1 cup of the strawberries, stir them in, and return the mixture to a boil. Cover the pan again and cook for 2 minutes.
- Take the pan off the heat and allow the mixture to cool. Pour it through a coarse sieve positioned over a pitcher, pressing the solids well to extract as much liquid as you can.
- Mix in the remaining 1 cup strawberries and the lemon juice. Pour the lemonade into stemmed glasses filled with ice cubes, then finish each glass with a little of the additional zest.
