Ingredients
- 2 large eggs
- 3 Tbsp milk
- 1/2 tsp vanilla extract
- 2 cups flour
- 2 Tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 5 Tbsp cold butter
- 1 cup frozen sliced strawberries
- 1/3 cup white chocolate chips
- 1/2 cup powdered sugar
- 1/4 tsp vanilla extract
- 1 Tbsp milk
Directions
- Heat your oven to 450 degrees. In a small bowl, beat the eggs, milk, and vanilla until the mixture is smooth, then put it aside. In a large bowl, combine the flour, sugar, baking powder, and salt, giving them a good stir so they’re evenly mixed. Cut the butter into pieces and add it to the flour mixture, then blend it in with your hands or a pastry cutter until the bowl looks like damp sand.
- Let the strawberries sit out just until they soften a bit, or warm them briefly in the microwave. Chop them roughly into bite-sized pieces, then fold the strawberries and white chocolate pieces into the egg mixture.
- Add the egg mixture, strawberries, and chocolate to the bowl with the dry ingredients and butter. Stir with a spoon until the dough comes together into a ball. If a little flour is still hanging around at the bottom of the bowl, use your hands to work it in.
- Move the dough onto a lightly floured surface and press it into a circle that is 6-8 inch in diameter and about 1.5 inches thick. Slice the circle into 8 wedges. Set the wedges on a parchment-lined baking sheet and bake in the heated oven for 13-15 minutes, until they’re lightly golden brown.
- Place the baked scones on a cooling rack. For the icing, stir the powdered sugar, vanilla, and milk together until smooth. Once the scones are completely cool, drizzle the icing over the tops.
