Streuseled Sweet Potatoes

Ingredients

  • 2 sweet Potatoes
  • 1 Tbsp olive oil
  • 4 tsp maple syrup
  • 2 Tbsp all-purpose flour
  • 2 Tbsp rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup chopped walnuts
  • 2 Tbsp butter
  • 1/2 tsp cinnamon

Directions

  1. Set the oven to 400ºF. Wash the sweet potatoes, then slice each one in half lengthwise, using a little care so they stay intact. Arrange the halves on a baking sheet with the cut surfaces facing up. Drizzle the olive oil over the exposed sweet potato flesh, then use your hands to spread it evenly across each cut face. Turn the halves over so the cut surfaces are against the pan.
  2. Roast the sweet potatoes for 30 minutes, until they are tender and lightly caramelized where they meet the baking sheet.
  3. As the sweet potatoes roast, make the streusel. Put the flour, oats, sugar, walnuts, butter, and cinnamon in a bowl. Work everything together with your hands or a pastry cutter until the mixture is crumbly, with small pea-sized bits throughout. Chill the streusel until you need it.
  4. When the sweet potatoes are done roasting, take them out of the oven and keep the oven on. With a spatula, gently turn the halves so the cut sides face up again. Using a small sharp knife, cut a careful crosshatch pattern into the sweet potato flesh.
  5. Spoon about 1 tsp maple syrup over the scored top of each sweet potato. Mound the streusel onto each half, then return them to the hot oven for another 10 minutes, until the topping is crisp. Serve hot.
