Sumac-Rubbed Salmon Roasted in Olive Oil

Ingredients

  • 2 pieces of skinless salmon, about 6 oz. each
  • About 2 tsp. olive oil, plus more for oiling the pan
  • About 2 tsp. fish rub
  • About 1 T Sumac
  • Tzatziki Sauce for serving, optional

Directions

  1. Take the salmon out of the refrigerator and allow it to lose its chill. Heat the oven to 450F/230C.
  2. Coat a large oven-safe frying pan generously with olive oil. A heavy cast iron pan works especially well here.
  3. Once the fish is at room temperature, slide the pan into the oven and let it get hot for 5 minutes.
  4. Rub both sides of the salmon with olive oil, then season well with Szeged Fish Rub and Sumac. Use your fingers to gently spread the spices so they cling to the fish.
  5. When the pan has been heating for 5 minutes, place the salmon in the skillet with the top side facing down. Roast for 5 minutes.
  6. Turn the salmon carefully, then continue roasting for about 3 minutes more, adjusting for the thickness of your pieces.
  7. Serve hot, adding Tzatziki Sauce if you like.
