Ingredients
- 1 tablespoon unsalted butter
- 2 large eggs
- Kosher salt and freshly ground black pepper, optional
Directions
Warm the butter in a cast iron, carbon steel, or nonstick skillet set over medium heat. When it begins to foam gently, tip the skillet so the melted butter coats the surface evenly. Crack the eggs into the pan with care, sprinkle with salt, and cook until the tops of the whites have set while the yolks remain liquid, about 3 minutes. Slide the eggs onto a plate, add pepper if you like, and eat right away.
