Super Easy Grilled Mushrooms

Ingredients

  • 1 pound medium-sized mushrooms
  • 1/4 cup Italian salad dressing, not low fat or fat free.

Directions

  1. Go ahead and rinse the mushrooms, even if every cookbook on the shelf says otherwise. Place them in a colander in the sink, run cold water over them, and leave them to drain thoroughly. If a few mushrooms are bigger than the rest, slice those so everything cooks more evenly.
  2. Transfer the mushrooms to a large Ziploc bag or a plastic container with a snap-on lid. Add the dressing; Newman's Own Original Recipe Olive Oil and Vinegar Dressing has 1 gram of sugar per serving.
  3. If your schedule allows, let the mushrooms marinate for an hour or 2. If not, you can still move right along.
  4. When you're ready to cook, heat the grill to medium-high, with the grill pan on the grill as it preheats.
  5. Pour the mushrooms into a colander and let them sit for a few minutes, so the excess oily dressing can run off instead of dripping into the grill and causing flare-ups.
  6. Once the mushrooms have drained well, tip them into the hot grill pan, or place them directly on the grill rack if you're skipping the pan. The dressing may still flare a bit; if it gets too lively, tame it with a spray bottle.
  7. Grill the mushrooms for 10-15 minutes, turning them now and then, until they are nicely browned but still have a little firmness.
  8. Serve hot.
