Ingredients
- 1 tablespoon vegetable oil
- 1/2 teaspoon red pepper flakes
- 1 medium onion, chopped medium
- 1/4 cup finely chopped peeled fresh ginger
- 1 clove garlic, minced
- 4 lbs mangos, peeled, pitted, and roughly chopped
- 1 1/2 cups sugar
- 3/4 cup distilled white vinegar
- 1/2 cup golden raisins
- 1 teaspoon garam masala
- 1 teaspoon Kosher salt
- 1/2 teaspoon mustard seeds
Directions
- Warm the oil with the chili flakes in a medium saucepan set over medium heat. Once the oil begins bubbling around the flakes, stir in the onion and cook, stirring frequently, until it has softened, about 5 minutes. Add the ginger and garlic, and cook until the mixture smells fragrant, about 1 minute.
- Stir the mangos, sugar, vinegar, raisins, garam masala, salt, and mustard seeds into the saucepan. Bring the mixture to a boil, then lower the heat and let it simmer until the mangos are tender and the liquid has cooked down into a thick, syrupy sauce, about 45 to 60 minutes.
- Transfer the chutney to a large jar. Let it cool, then cover it and refrigerate.
