  • 1/2 head of green cabbage, shredded
  • 1/2 head of red cabbage, shredded
  • 1 large carrot, grated
  • 1/4 cup diced red onion
  • 1 jalapeno pepper, seeded and minced, optional

  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and freshly ground black pepper to taste

Directions

Grab a large bowl and stir together the cabbage, carrots, and scallions. Pour in the lime juice and toss until the vegetables are coated. Give it a good hit of salt and pepper, then work in the mayonnaise 1 Tbs. at a time, stirring after each addition, until it is as creamy as you like. Taste and adjust with more salt and pepper. Fold in the cilantro, if you are using it, and serve. Transfer any leftovers to an airtight container and keep them in the refrigerator for up to 3 days.
