Prep 15 min · Makes 4 servings

Ingredients
- 1/2 head of cabbage, shredded
- 1 large mango, diced
- 1/4 cup roasted cashews, chopped
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey or agave nectar
- Salt and pepper to taste
Directions
- Combine the mangos, cabbage, bell pepper, and onion in a roomy bowl, turning everything together until the mix looks evenly distributed.
- In a separate small bowl, briskly mix the lime juice, vinegar, oil, salt, and pepper flakes, then drizzle that dressing over the slaw.
- You can bring it to the table right away, or let it sit in the refrigerator for an hour so the flavors can settle into each other. Just before serving, fold in the mint and finish with the cashews on top.
- Transfer leftovers to an airtight container and refrigerate for up to 3 days.
