Tender Slow Cooker Whole Chicken

Ingredients

  • 1 Whole 4-6 lb chicken, giblets removed
  • 1/2 Teaspoon Fresh Black Pepper
  • 1/2 Teaspoon Fresh Thyme
  • 1 Clove of Garlic, minced
  • 1 Teaspoon Onion Powder
  • 2 Teaspoon Paprika
  • 2 Teaspoon Kosher Salt

Directions

  1. Rinse the whole chicken with water, cleaning both the outside and the cavity, then pat it dry and put it to the side. Stir the seasonings together in a small dish.
  2. With your fingers, carefully loosen the skin above the breasts, working upward toward the neck so the skin pulls away from the meat without tearing. Massage the spice blend over the entire chicken, coating the outside and tucking some directly onto the breast meat under the skin.
  3. Set the chicken in a crock pot and cook it on low for 8 hours. When it has finished cooking, lift it out of the crock pot and serve with potatoes and veggies.
  4. If you want gravy, there will be plenty of liquid waiting for you. Warm that liquid in a pot, and in a separate small dish, stir a little cornstarch with cold water. When the liquid comes to a boil, spoon a little of it into the cornstarch mixture to warm it, then slowly whisk that mixture back into the pot. Season as needed.
