Ingredients
- 3/4 cup whole-wheat flour
- 3/4 cup all-purpose or bread flour
- 1 envelope quick-rising yeast
- 3/4 teaspoon fine sea salt
- 1/4 teaspoon sugar
- 2/3 cup lukewarm water
- 2 teaspoons extra-virgin olive oil
Directions
- Set a pizza stone on the bottom rack of the oven, then heat the oven to 500 degrees F.
- Add the dry ingredients to a food processor and pulse just to combine them. Stir the water and oil together in a measuring cup. With the processor running, pour in the warm liquid little by little, using just enough for the dough to gather into a ball. You want the dough to feel soft. If it seems too dry, work in 1-2 tablespoons more liquid and process until it balls up. If it feels sticky, add 1 to 2 tablepoons of flour and process until the dough comes together.
- Turn the dough out and knead it by hand for 1 minute. Drape it with a cloth and let it sit for 10 minutes. Or store it in an airtight container for 2-3 days, pressing it down whenever it doubles or triples.
- Cut the dough into two equal pieces, then form each one into a ball. Flour your work surface generously and roll each piece into a 12 inch round.
- Add your toppings and bake for about 10 minutes.
