Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 egg yolks
- 1 3/4 cups milk
- 1/2 cup canola oil
- 2 egg whites
Directions
- Combine the flour, baking powder, and salt in a medium mixing bowl, then create a hollow in the middle.
- In a separate bowl, lightly beat the egg yolks. Mix in the milk and oil.
- Pour the yolk mixture into the dry ingredients in one addition. Stir only until the flour is dampened; the batter should still look bumpy.
- In a small bowl, beat the egg whites until they hold stiff peaks, with the tips pointing upright.
- Fold the beaten whites carefully into the flour and yolk batter, leaving a few puffs of egg white visible. Resist the urge to keep stirring.
- Ladle the batter into your waffle iron, taking care not to fill it too full.
- Serve with real maple syrup and unsalted butter.
