Ingredients
- 1 cup key lime juice
- 1 cup water
- 1/4 cup vodka, optional
- 1/4 cup vanilla sugar
- 1/2 cup heavy cream
- Note:
- To make vanilla sugar, stir together white sugar and a used vanilla bean with a fork or clean hands. The texture of the sugar rubs the last black specks from the inside of the vanilla pod. Waste not, want not.
Directions
Combine the key lime juice, water, and vodka in a pot and bring the mixture to a boil, then stir in the vanilla sugar. If you’d rather preserve the alcohol, hold the vodka back and add it later. When the sugar has fully melted, remove the pot from the heat and let the mixture cool. Stir in the cream, along with the vodka if you saved it, and pour everything into a brownie baking dish. Transfer the dish to the freezer, then rake it with a fork once each hour for 4 hours, or until it freezes into flaky key lime crystals. Spoon into frozen martini glasses to serve.
