Ingredients
- 1/2 cup fresh navel orange juice
- 2 tsp fresh orange zest
- 2 Tbsp fresh lemon juice
- 1 tsp lemon zest
- 2 Tbsp fresh lime juice
- 1/2 tsp lime zest
- 1/4 cup olive oil
- 3 Tbsp chopped shallot or red onion
- 1 Tbsp minced fresh garlic
- 1 Tbsp chopped fresh rosemary
- 2 tsp dijon mustard
- 2 tsp honey
- 1 1/2 tsp salt, or to taste
- 1/2 tsp freshly ground black pepper.
- 4 – 5 boneless skinless chicken breasts or thighs
Directions
- Whisk everything except the chicken in a mixing bowl until the marinade looks fully blended. Put the chicken in a gallon size resealable bag or in a dish, then pour the marinade over the top. Move it to the refrigerator and let it sit for at least 1 hour and no more than 6 hours.
- Heat a grill to medium-high. Take the chicken out of the marinade and grill it until the thickest part reaches 165 degrees, flipping it once midway through. If the outside is picking up color too fast, lower the grill heat as needed.
- Rest the chicken for 5 minutes before you serve it. Add chopped fresh parsley on top if you’d like.
